In accordance with the local climatic conditions and folk traditions in Republic of Bashkortostan, dairy horse breeding occupies a leading position. Mare's milk is unique raw material for production wide variety highly nutritious, complete easily digestible food products. Scientists recommend mare's as medicinal dietary product. The paper presents yogurt recipe developed on basis composition using milk. received patent No 2677219 ( Composition…, 2019 ). It known that fat rich polyunsaturated fatty acids, which are particular physiological importance human body. There need to ration ensure constant intake acids ω-3 family food. purpose this work study acid yoghurt. To obtain fermented product, from Bashkir mares was used material. research prototypes yoghurt were carried out Faculty Food Technologies State Agrarian University. determination sample took place accredited testing laboratory centre "Federal Research Centre Nutrition Biotechnology" (Moscow). use allows one change finished Analysis has showed it high content oleic, γ-linolenic, α-linolenic arachidonic acids.
